  • Research interests are centered on the effect of human nutrition, foods, food components and natural products in human health:
  • Nutritional interventions to study the effect of ingredients / foods on biomarkers associated with chronic diseases.
  • Bioactive compounds in foods of the Mediterranean diet.
  • Studies on the absorption and bioavailability of phytochemicals.
  • Studies of the antioxidant power of extracts from natural products and foods.
