The research activity falls within the field of Food Chemistry with applications in nutrition. It focuses on food components and properties and the design of new foods. For this purpose, the chemical composition and specific bioactive compounds, physicochemical properties, organoleptic characteristics, nutritional value and bio-functional properties of conventional foods and foods designed with targeted beneficial metabolic effects, are studied.
