Dr Maria Kotsou has been involved in the study of probiotic microorganisms and their properties and their effect on human health and disease. She has also worked on the utilization and biotransformation of olive mill wastewater, its role in the formation of the soil microbiota and the biodegradation of wastes resulting from the processing of edible olives.
